Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Lamb

    • Spread harissa paste evenly all over lamb racks. Marinate for 30–45 minutes.
    • Season lamb and seal in a hot pan. Finish in the oven until medium rare.
  3. Roast Vegetables

    • Place cherry tomatoes and zucchini flowers on a baking tray.
    • Roast in the oven until just tender and lightly blistered.
  4. Mash

    • Bring water and salt to a boil in a pot. Once boiling, remove from heat.
    • Add milk and KNORR Potato Flakes, whisking to combine.
    • Let it sit for 2 minutes, then whisk again. Set aside.
  5. Gravy

    • Whisk KNORR Jus and water together, and bring to a boil.
    • Simmer for 2 minutes. Remove and set aside.
  6. To Serve

    • Divide the mash between serving plates. Top with lamb racks on bed of mash, roast vegetables on the side, and a drizzle of gravy.
