Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Hummus

    • Add HELLMANN'S Vegan Mayonnaise, chickpeas, garlic, cumin, lemon juice, and lemon zest to a food processor.
    • Blend until smooth. Season to taste.
  3. Chickpeas

    • Toast the chickpeas with olive oil in a hot pan. Season.
  4. Couscous

    • Cook the couscous according to packaging instructions.
    • Toss through chopped parsley, lemon juice, and lemon zest. Season.
  5. To Assemble

    • Deep fry the falafel until golden brown and crispy.
    • Start with a bed of couscous in a bowl, and top with a dollop of hummus.
    • Arrange the falafel, lettuce, radicchio, olives, tomatoes, and radishes.
    • Drizzle extra olive oil over the hummus and top with the toasted chickpeas.
    • Garnish with paprika. Serve.
