Baked fish with lemon sauce

With a base of creamy Knorr Hollandaise Sauce Gluten Free combined with zesty lemon juice, this simple fish meal tastes delicious and suits all palates.

Baked Fish with Lemon Sauce

Ingredients

All levels

500g Knorr Hollandaise Sauce Gluten Free
80ml Lemon juice
10 White fish fillets (approx. 100g each)
80ml Olive oil
180g Knorr Instant Sweet Potato Mash Gluten Free

300g Steamed broccoli

Levels 5* - 4**

35g* / 60g** Knorr Potato Flakes Gluten Free
300g Steamed broccoli
20g* / 30g** Knorr Roux

Lemon Hollandaise Sauce

  • Place Knorr Hollandaise Sauce Gluten Free in a saucepan with lemon juice. Heat over medium-low heat until warmed through. Whisk until combined and smooth. Cover and keep warm for Levels 6-7. Thicken with Knorr Roux for Levels 4-5 as per below.

Baked Fish

  • Place fish fillets in a gastronome lined with baking paper and season. Drizzle with olive oil.
  • Preheat combi oven to 170°C. Cover gastronome tightly and steam bake fish for 15-20 minutes or until fish is just cooked. Do not overcook or fish will become dry.

Sweet Potato Mash

  • In a large pan, bring 800ml water to the boil. Once boiling, remove from heat and add 180g Knorr Instant Sweet Potato Mash Gluten Free. Whisk until smooth before serving. Adjust consistency to correct IDDSI level if required.

Level 5

Baked Fish

  • Place 700g of prepared fish, chopped to bite-size pieces (including juices) in a Robot-Coupe or blender with 25g Knorr Potato Flakes Gluten Free. Pulse for 1-2 minutes until soft and moist with no leaking or dripping from the spoon. Adjust consistency for IDDSI level as required.

Steamed Broccoli

  • Place 300g steamed broccoli in a Robot-Coupe or blender with extra 10g Knorr Potato Flakes Gluten Free. Pulse for 30 seconds to 1 minute or until minced and the correct consistency for IDDSI Level 5.

Lemon Hollandaise Sauce

  • Place Knorr Hollandaise Sauce Gluten Free in a saucepan with lemon juice. Heat over medium to low heat until warmed through. Add Knorr Roux and whisk until combined and smooth. Cover and keep warm.

Level 4

Baked Fish

  • Place 700g of prepared fish, chopped to bite-size pieces (including juices) in a Robot-Coupe or blender with 50g Knorr Potato Flakes Gluten Free. Pulse for 3-4 minutes until a smooth puree and adjust consistency for IDDSI Level 4.

Steamed Broccoli

  • Prepare broccoli as per Level 5. Adjust consistency for IDDSI Level 4 as required.

Lemon Hollandaise Sauce

  • Place Knorr Hollandaise Sauce Gluten Free in a saucepan with lemon juice. Heat over medium to low heat until warmed through. Add Knorr Roux and whisk until combined and smooth. Cover and keep warm.

To serve

Level 7

  • Cool the prepared fish slightly and serve with warmed lemon hollandaise sauce, mashed sweet potato and steamed broccoli.

Level 6

  • Cool fish slightly and chop into bite-size pieces. Place into mould to shape.
  • Chop steamed broccoli into 1.5cm pieces.
  • Serve fish with warmed lemon hollandaise sauce, sweet potato mash, and chopped (1.5cm) steamed broccoli.

Level 5

  • Serve pureed fish and broccoli in ramekins with warmed lemon hollandaise sauce and sweet potato mash. Alternatively, place fish and broccoli into moulds, refrigerate or freeze, and reheat gently for service another day.

  • Serve pureed fish and broccoli in ramekins with warmed lemon hollandaise sauce and sweet potato mash.
  • Alternatively, place fish and broccoli into moulds, refrigerate or freeze, and reheat gently for service another day.
