Chicken chasseur hot pot

This French classic is always popular on Aged Care menus. Knorr Concentrated Liquid Chicken Stock and Knorr Italiana Pronto Napoli Gluten Free add rich flavour and a velvety touch, creating a perfectly balanced dish.

Chicken Chasseur Hot Pot

Ingredients

All levels

80ml Olive oil
1kg Chicken thigh fillets, chopped
400g Button mushrooms, quartered
150ml White wine
20g Garlic, crushed
1.2kg Knorr Italiana Pronto Napoli Gluten Free
50g Knorr Concentrated Liquid Chicken Stock
130g Knorr Potato Flakes Gluten Free
250ml Milk

Additional Ingredients

Levels 7* - 6**

500g* Steamed green beans
500g** Steamed peas and chopped carrots, 1.5cm

Levels 5* - 4**

300g Steamed peas
300g Steamed pumpkin
75g* / 125g** Knorr Potato Flakes Gluten Free

Methods

All levels

Chicken Chasseur

  • Heat oil in a large pan over high heat. Add chicken and cook for 5 minutes until browned. Add mushrooms, white wine, garlic, Knorr Italiana Pronto Napoli Gluten Free and Knorr Concentrated Liquid Chicken Stock. Simmer over medium heat for 20 minutes until tender and reduced.

Mashed Potato

  • In a large pan, bring 550ml water to the boil. Once boiling, remove from heat and add 250ml milk and 130g Knorr Potato Flakes Gluten Free. Whisk until combined, sit for 2 minutes then whisk again until correct consistency for each IDDSI level is achieved.

Level 5

Chicken Chasseur

  • Place 900g of the Chicken Chasseur mixture in a Robot-Coupe or blender with 50g Knorr Potato Flakes Gluten Free. Pulse for 1-2 minutes until soft and moist with no leaking or dripping from the spoon and the correct consistency for this IDDSI level is achieved.

Pureed Peas & Pumpkin

  • Place 300g of the steamed peas in a Robot-Coupe or blender with 10g Knorr Potato Flakes Gluten Free. Pulse for 30 seconds to 1 minute or until near smooth. Adjust consistency for this IDDSI level as required.
  • Repeat the with 300g of the steamed pumpkin and an extra 15g Knorr Potato Flakes Gluten Free and adjust consistency for this IDDSI level as required.

Level 4

Chicken Chasseur

  • Place 900g of the Chicken Chasseur mixture in a Robot-Coupe or blender with 100g Knorr Potato Flakes Gluten Free. Pulse for 3-4 minutes until a smooth puree. Adjust consistency for this IDDSI level as required.

Pureed Peas & Pumpkin

  • Repeat same steps as for Level 5. Adjust consistency for the required IDDSI level.

To serve

Level 7

  • Cool slightly and serve Chicken Chasseur with mashed potato and steamed green beans.

Level 6

  • Chop chicken chasseur into 1.5cm.
  • Cool slightly and serve with mashed potato and steamed vegetables.

Level 5

  • Cool slightly and serve with mashed potato, warmed peas and pumpkin. Alternatively, place Chicken Chasseur and vegetables into moulds, refrigerate or freeze, and gently reheat for service another day.

Level 4

  • Serve with mashed potato, pureed peas and pumpkin. Alternatively, place Chicken Chasseur and vegetables into moulds, refrigerate or freeze, and gently reheat for service another day.
