Creamy vegetable korma

With plenty of colourful vegetables, this mild and slightly sweet creamy curry comes together easily and authentically using Knorr Patak’s Korma Paste and Knorr Thai Coconut Milk Powder. It can also be easily prepared for all four IDDSI texture levels.

Creamy Vegetable Korma

Ingredients

All levels

50ml Vegetable oil
70g Knorr Patak’s Korma Paste
5g Knorr Vegetable Booster Gluten Free
200g Potato, diced 1.5cm
200g Carrots, diced 1.5cm
100g Green beans, diced 1.5cm
100g Frozen peas
100g Knorr Italiana Pronto Napoli Gluten Free
100ml Cream, full-fat
150g Knorr Thai Coconut Milk Powder

Additional Ingredients

Levels 7 - 6

500g Steamed broccolini
500g Cooked white rice (not sticky)

Levels 5* - 4**

240g* / 350g** Knorr Potato Flakes Gluten Free
300g Broccoli

Methods

All levels

Curry

  • Heat oil in a large pan. Add Knorr Patak’s Korma Paste and cook for one minute until aromatic.
  • Add 750ml water, Knorr Vegetable Booster Gluten Free, potato, and carrots. Bring to a simmer over medium heat and cook until vegetables are starting to soften. Add beans, peas and Knorr Italiana Pronto Napoli Gluten Free and continue cooking until vegetables are tender.
  • Stir through cream and Knorr Thai Coconut Milk Powder until fully combined. Simmer for a further 5 minutes until the sauce is reduced. Cool slightly.

Level 5

Minced & Moist Curry

  • Place 900g of the prepared curry mixture in a Robot-Coupe or blender with 100g Knorr Potato Flakes Gluten Free. Pulse for 1-2 minutes until soft and moist, with no leaking or dripping from the spoon. Adjust to the required consistency for this IDDSI level, if needed.

Pureed Broccoli

  • Place 300g of the steamed broccoli in a Robot-Coupe or blender with 10g Knorr Potato Flakes Gluten Free. Pulse for 30 seconds to 1 minute or until near smooth. Adjust to the required consistency for IDDSI Level 5, if needed.

Mashed Potato

  • In a large pan, bring 550ml water to the boil. Once boiling, remove from heat, add 250ml milk and 130g Knorr Potato Flakes Gluten Free. Whisk until combined, sit for 2 minutes then whisk again until correct consistency for this IDDSI level is achieved.

Level 4

Pureed Curry

  • Place 900g of the prepared curry mixture in a Robot-Coupe or blender with 200g Knorr Potato Flakes Gluten Free. Pulse for 3-4 minutes until a smooth puree. Adjust to the required consistency for this IDDSI level, if needed.

Pureed Broccoli & Mash

  • Place 300g of the steamed broccoli in a Robot-Coupe or blender with 20g Knorr Potato Flakes Gluten Free. Pulse for 30 seconds to 1 minute or until near smooth. Adjust to the required consistency for IDDSI level 4, if needed.

Mashed Potato

To serve

Level 7

  • Serve the prepared curry with steamed broccolini and rice.

Level 6

  • Chop steamed broccolini to 1.5cm and serve with the prepared curry and steamed rice.

Chef tip: Rice requires a sauce to moisten it and hold it together. Rice should not be sticky and should not separate into individual grains when cooked and served. May require a thick, smooth, non-pouring sauce to moisten and hold the rice together.

Level 5

  • Cool slightly and serve minced korma in a bowl with mashed potato and warmed broccoli puree. Alternatively, place korma and broccoli into moulds, refrigerate or freeze until set, and reheat gently for service another day.

Level 4

  • Cool slightly and spoon korma onto a plate with the piped mashed potato and pureed broccoli. Alternatively, place korma and pureed broccoli into moulds, refrigerate or freeze, and reheat gently for service another day.

NOTE: Ensure you complete the IDDSI Testing methods, as set out in the IDDSI Audit Sheets, before serving the dish.
