Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Stuffed Vegetables

    • Place prepared vegetables onto 2 lined baking trays. Drizzle with oil and season.
    • Cook vegetables in oven at 180°C until softened.
    • Cook the couscous according to packet instructions, using KNORR Vegetable Booster.
    • Scoop out the centres, mash roughly, then mix with choice of fillings — either rice or couscous. Add the chopped herbs, craisins, and nuts to each mix. Place back into the oven to cook for 20 minutes or until softened.
  3. To Serve

    • Place all filled vegetables onto a serving dish, adding the lids back on to the pumpkins and tomatoes.
