Beef brisket pie

This pie — topped with potatoes and packed with beef, vegetables, mild spices, and a touch of beer — will be a hit with residents. This recipe adapts easily and presents beautifully at all four IDDSI levels.
Ingredients
All levels
15g Ground coriander
5g Ground cumin
5g Dried oregano
5g Garlic powder
80ml Olive oil
1.2kg Beef brisket, diced
150g Onion, diced 1.5cm
100g Celery, diced 1.5cm
100g Carrot, diced 1.5cm
200ml Beer
10g Knorr Beef Booster Gluten Free
10ml Worcestershire sauce
220g Knorr Italiana Pronto Napoli Gluten Free
100g Knorr Potato Flakes Gluten Free
250ml Milk
Additional Ingredients
Levels 7 - 6
20g Parsley, chopped
Levels 5* - 4**
75g* / 125g** Knorr Potato Flakes Gluten Free
Methods
All levels
Brisket
- Combine spices and toss with diced brisket, coating well. Cover and refrigerate for an hour or overnight.
- Heat oil in a large pan over high heat. Add brisket and vegetables and cook for 10 minutes until browned. Add beer, Knorr Beef Booster Gluten Free, Worcestershire sauce and Knorr Italiana Pronto Napoli Gluten Free.
- Preheat combi oven to 140°C. Transfer brisket mixture to a large gastronome. Cover tightly and cook for 2 hours or until meat is tender.
- Remove, set aside and keep warm.
Mashed Potato Topping
- In a large pan, bring 400ml water to the boil. Once boiling, remove from heat, add 250ml milk and season with salt and pepper. Whisk in Knorr Potato Flakes Gluten Free and continue whisking until combined. Sit for 2 minutes then whisk again.
Level 5
Brisket Mixture
- Chop brisket into bite-size pieces. Place 900g of the beef brisket mixture in a Robot-Coupe or blender with 75g Knorr Potato Flakes Gluten Free. Pulse for 1-2 minutes until soft and moist with no leaking or dripping from the spoon and the correct consistency for this IDDSI level.
Level 4
Brisket Mixture
- Chop brisket into bite-size pieces. Place 900g of the beef brisket mixture in a Robot-Coupe or blender with 125g Knorr Potato Flakes Gluten Free. Pulse for 3-4 minutes until soft puree with no leaking or dripping from the spoon and the correct consistency for this IDDSI level is achieved. Cool slightly.
To serve
Level 7
- Spoon or pipe mashed potato to cover the mixture, and garnish with chopped parsley.
Level 6
- Chop brisket into bite-size pieces, combine with the vegetables and sauce it’s cooked in and place into a pie dish.
- Spoon or pipe mashed potato on top and serve.
Level 5
- Spoon or pipe mashed potato over pie dishes. Serve.
Level 4
- Spoon brisket mixture into individual pie dishes and pipe mashed potato on top.
- Alternatively, place pureed brisket mix into mould, refrigerate or freeze, and reheat gently for service another day.
